TRUST Whiskey begins with 100% organic hull-less unmalted barley grown in Armstrong, British Columbia. It is triple-distilled in our handmade CARL single copper pot still. For (3) years, it has been quietly resting in mature 220-litre Madeira barrels to slowly gain character, complexity and colour.
Distiller’s Tasting Notes off the Barrel (63% alc./vol.)
Aromas of Barley Grain and almond punctuate the nose. The finish has a soft, yet dignified white chocolate character.
In The Bottle (42% alc./vol.)
On the nose, TRUST Single Cask shows lemon drop, Christmas cake and spice with a hint of vanilla. The palate is full-bodied with a base of warm barley grain, almond, and a whisper of white chocolate. At 42% alc./vol. the finish has a robust concentration that is super smooth and lingers on.
