TRUST Southern Cask Strength Whiskey is our Northern impression of a classic full strength American Bourbon. It begins with a mash bill of 100% organic British Columbian corn grown in Spallumcheen, British Columbia. It was triple-distilled in our hand-made CARL single copper pot still and then transferred to new charred 200 litre Oak barrels. TRUST Southern Cask Strength matured for 7.5 years. It is bottled uncut, straight from the barrel, without chill filtration with no color, or flavor additives – the purest form of Whiskey. At Cask Strength, it is possible to enjoy Trust Southern the same way we do!
In The Bottle (62.5% alc./vol.)
On the nose, TRUST Southern Cask Strength entices with a grilled ripe peach character, alongside notes of caramel and vanilla. Straight out of the barrel, uncut and unfiltered, it is intense and well-balanced with spice, honey, and subtle sweet notes of toffee, nougat, and molasses; with vanilla and caramel at the back palate. This hearty whisky at 62.5% alc./vol., has a rich amber tone. The finish is intense, long, warm and nicely layered showcasing bold flavors of vanilla, raisin and wood spice that deliciously lingers on and on.
